Tandoori Chicken

Ingredients
  

  • 8-10 Skinless, bone-in, Chicken Thigh or Legs
  • 3 Tablespoons of Tandoori Masala
  • 1 Teaspoon Salt
  • 1 cup Plain Yoghurt
  • 4 Cloves of Garlic, minced
  • 2 Tablespoons Ginger, minced
  • 2 Tablespoons Lemon Juice
  • 2 Tablespoons Vegetable Oil

Instructions
 

  • Heat oil in a small pan and add the spices and salt
  • Warm in a pot until fragrant. Set aside to cool completely
  • In a large bowl, mix the Garlic, Ginger, Yoghurt and Lemon Juice
  • Add oil/spice blend to the yoghurt mix
  • Cut 3 slits in the meat, to the bone.
  • Thoroughly massage marinade into the meat.
  • Set chicken aside for 6 - 8 hours
  • Grill chicken over indirect heat until internal temp is 165
  • Rest the chicken for 5 minutes and serve over Saffron Rice

Notes

  • Feel free to add other spices like Cardomon, Star Anise, Nutmeg, Allspice, Mace or other flavours to the rice
