Rinse and dry Cucumbers. Cut cross-wise into pieces about 4u0022 long, then cut those lengthwise
Lay Cucumbers on flat surface, cut side down. Press down on the flat of your blade, using your hand, to break/smash the pieces into bite-sized.
Place Cukes, big pinch of salt and big pinch of sugar into a strainer. Place weight on top of the cukes to help drain. Ice is a good weight here. Drain for 15-30 minutes, up to 4 hours.
Make the dressing using Salt, Sugar, and Rice Vinegar. Stir till mixed.
Stir in Sesame Oil and Soy Sauce to the dressing.
Drain any residual water/juices in the cukes and transfer to a large bowl.
Add dressing (to taste, start with some, add more gradually) and mix gently but well.
Serve garnished with chili peppers and cilantro
