Make your spice blend with Coriander, Chili Flakes, Cayenne, Cinnamon. Set aside 1/3 of the mix, and mix that with the sumac
Make the kofta by mixing the spice blend, water and ground meat. Mix well, cover and refrigerate for one hour
Remove meat and divide into 8 portions. Using your hands, shape each portion into a longer more flat length. Apply that to the skewer, pressing firmly to ensure contact.
Back into the fridge for 30 minutes to firm up
Remove Kofta, and sprinkle with the reserved spice blend.
Grill over medium direct heat until cooked.
Serve with rice, pita, Hummus, Lebanese Garlic Sauce, Tzatziki...so many options.
