Grilled Salmon Taco

Ingredients
  

  • 1 pound salmon fillet
  • 3 tablespoon Salmon rub (3 to 4 T)
  • 1 juice of 1 lime
  • 1 avocado
  • 1/2 cup Peppercorn Ranch Dressing
  • 4 clove garlic (minced)
  • 1/2 red onion (diced)
  • 1 tomato, large (diced)
  • 1 lime (cut into wedges)
  • 10 corn or flour tortillas?, small

Instructions
 

  • Preheat grill, then squeeze the juice of the lime over the salmon fillet. Generously sprinkle salmon rub over salmon fillet, coating evenly.
  • Cut open avocado and remove flesh, crushing to an even texture. Add ranch dressing, garlic, and mix well.
  • Grill salmon over a medium high heat until done. Break or chop salmon into small pieces and distribute among warmed tortillas. Top with avocado dressing, diced tomatoes, and red onion.

Notes

  • Serve with mexican rice or a good bean dish.
