Fridge Dill Pickles

Who knew delicious pickles could be so fast? A Vacuum Chamber makes a huge difference.

Ingredients
  

  • 2 pounds of Kirby or Mini Cukes, sliced once, lengthways
  • 1 u0026 1/4 Cups White Vinegar (5% acidity)
  • 2 TBSP Kosher Salt
  • 2 TBSP Sugar
  • 2 TBSP Coriander Seeds
  • 6 - 100 cloves of Garlic (Base recipe is 3 per jar but I use 8)
  • 1 TSP Mustard Seeds
  • 1/4 TSP Red Pepper Flakes
  • 16 branches of Fresh Dill

Instructions
 

  • In a small pot, add the Salt, Sugar and Water. Heat only till dissolved.
  • Add 2 cups of ice cold water and put aside
  • Into each jar, add your cucumbers, seasonings and dill
  • Pour your brine liquid into each jar.
  • Close jars and put in the fridge for a few days. OR if you have a vacuum attachment or chamber, use that to make pickles in 24 hours!

Notes

  • This is a very basic recipe, add your own flavours.
  • The extra garlic can make your pickles a bit spicy
