5 large onions, I use Vidalia
2 Tablespoon of butter
8 cups rich beef stock
1/4 cup red wine
4 Bay leaves
3 Sprigs of fresh thyme
Crouton for the top (I use toasted baguette)
Lots of Swiss cheese (gruyere is amazing)
Instructions
Peel and slice your onions
In a large pot with butter, on LOW, slowly reduce your onions (2 hours+)
Make sure they are nice and caramelized, take your time
Deglaze pot with red wine
Add Stock and herbs
Cover and simmer one hour
Turn on oven broiler to High
Ladle into Soup Bowls
Place crouton on top and load up with cheese.
Add more cheese
Into the broiler till the cheese is melted and bubbling
Let sit for 10 minutes
Garnish with fresh thyme or chives
