Ingredients
1 large Onion, sliced thinly
3 cloves Garlic, minced
10g fresh Ginger, chopped
1 TBSP Tomato Paste, heaping
1 TBSP Vegetable Oil
1 TSP Cumin
1 TSP Coriander Seeds, ground
1 TSP Turmeric
1/2 TSP Chili Powder
1 TBSP Garam Masala
200 ml Chicken Stock
1 tin Coconut Cream, or milk
1 TBSP Honey
1 TBSP Soy Sauce
2-3 TBSP Corn Starch/cold water slurry to thicken
Instructions
Soften the onion in Vegetable Oil, then add Garlic, Ginger, Tomato Paste and cook out for 3 minutes
Add spices and continue to stir for another couple of minutes
Stir in Coconut Cream and simmer for 30 minutes on low heat
Blend until smooth and serve right away.
Notes
We use this sauce all the time, great for making meat pies too!
