3 Gallons Ice Cold Water
6 cloves Garlic, crushed
12 Cardamom Seeds, whole
3 TBSP Whole Peppercorns
1.5 Cups Kosher Salt
3/4 Cup Brown Sugar
3 TBSP Savoury
Instructions
Mix it all up
Submerge the birds
Set them overnight in the fridge
Next day, rinse them off and pat dry
Cook as you wish.
Notes
I use a
Briner Bucket
when bringing or curing or keeping things submerged.
I use Newfoundland Savoury (Mount Scio) here, but dried savoury would be good too
