
Shrimp Scampi
Ingredients
- 2 Tablespoons olive oil
- 4 tablespoons butter
- 6 large garlic cloves, minced
- 1 1/4 pounds (600 grams) large shrimp prawns, shelled with tails on or off
- Salt and fresh ground black pepper to taste
- 1/4 cup rich chicken broth
- 1/4 teaspoon crushed red pepper flakes
- 2 tablespoons fresh lemon juice
- 1/4 cup chopped parsley
Instructions
- Add the oil and 2 TBS of butter to the pan at a medium heat
- Add garlic and sautee for a couple of minutes, should be very fragrant
- Add shrimp, season with Su0026P
- Cook for 1 minute, then flip for one minute
- Add chicken stock and red pepper flakes, simmer to reduce liquids by half
- Add lemon juice, remaining butter and parsley
- remove from heat immediately
