Garlic Confit

Ingredients

  • 4 heads of Garlic
  • 2 cups olive oil
  • 3 sprigs thyme
  • 4 bay leaves

Method

  1. Peel your garlic, leave the cloves intact (no smashing)
  2. In a pot, add cloves and cover with oil
  3. Add herbs
  4. On LOW heat, slowly cook the garlic in oil. It should be frying, but you will see little bubbles eventually
  5. After 2 – 2.5 hours, pour into a mason jar and store in fridge for 4 months+
