Fridge Dill Pickles

Who knew delicious pickles could be so fast? A Vacuum Chamber makes a huge difference.

Ingredients

  • 2 pounds of Kirby or Mini Cukes, sliced once, lengthways
  • 1 u0026 1/4 Cups White Vinegar (5% acidity)
  • 2 TBSP Kosher Salt
  • 2 TBSP Sugar
  • 2 TBSP Coriander Seeds
  • 6 – 100 cloves of Garlic (Base recipe is 3 per jar but I use 8)
  • 1 TSP Mustard Seeds
  • 1/4 TSP Red Pepper Flakes
  • 16 branches of Fresh Dill

Method

  1. In a small pot, add the Salt, Sugar and Water. Heat only till dissolved.
  2. Add 2 cups of ice cold water and put aside
  3. Into each jar, add your cucumbers, seasonings and dill
  4. Pour your brine liquid into each jar.
  5. Close jars and put in the fridge for a few days. OR if you have a vacuum attachment or chamber, use that to make pickles in 24 hours!

Notes

  • This is a very basic recipe, add your own flavours.
  • The extra garlic can make your pickles a bit spicy
