
Chip Shop Curry Sauce
Ingredients
- 1 large Onion, sliced thinly
- 3 cloves Garlic, minced
- 10g fresh Ginger, chopped
- 1 TBSP Tomato Paste, heaping
- 1 TBSP Vegetable Oil
- 1 TSP Cumin
- 1 TSP Coriander Seeds, ground
- 1 TSP Turmeric
- 1/2 TSP Chili Powder
- 1 TBSP Garam Masala
- 200 ml Chicken Stock
- 1 tin Coconut Cream, or milk
- 1 TBSP Honey
- 1 TBSP Soy Sauce
- 2-3 TBSP Corn Starch/cold water slurry to thicken
Instructions
- Soften the onion in Vegetable Oil, then add Garlic, Ginger, Tomato Paste and cook out for 3 minutes
- Add spices and continue to stir for another couple of minutes
- Stir in Coconut Cream and simmer for 30 minutes on low heat
- Blend until smooth and serve right away.
