
Fridge Dill Pickles
Who knew delicious pickles could be so fast? A Vacuum Chamber makes a huge difference.
Ingredients
- 2 pounds of Kirby or Mini Cukes, sliced once, lengthways
- 1 u0026 1/4 Cups White Vinegar (5% acidity)
- 2 TBSP Kosher Salt
- 2 TBSP Sugar
- 2 TBSP Coriander Seeds
- 6 – 100 cloves of Garlic (Base recipe is 3 per jar but I use 8)
- 1 TSP Mustard Seeds
- 1/4 TSP Red Pepper Flakes
- 16 branches of Fresh Dill
Instructions
- In a small pot, add the Salt, Sugar and Water. Heat only till dissolved.
- Add 2 cups of ice cold water and put aside
- Into each jar, add your cucumbers, seasonings and dill
- Pour your brine liquid into each jar.
- Close jars and put in the fridge for a few days. OR if you have a vacuum attachment or chamber, use that to make pickles in 24 hours!
