
Lebanese Beef Kofta
Not your ordinary Kabobs, these Koftas have tremendous flavour and are best suited for charcoal cooking.
Ingredients
- 1 lb Lamb (or Beef/Veal)
- 1/2 TSP Ground Coriander
- 2 TSP Aleppo Chili Flakes
- 1 pinch Cayenne Pepper
- 1 pinch Ground Cinnamon
- 1 TSP Ground Sumac (Optional)
Spice Blend
- 2 TBSP Cold Water
Instructions
- Make your spice blend with Coriander, Chili Flakes, Cayenne, Cinnamon. Set aside 1/3 of the mix, and mix that with the sumac
- Make the kofta by mixing the spice blend, water and ground meat. Mix well, cover and refrigerate for one hour
- Remove meat and divide into 8 portions. Using your hands, shape each portion into a longer more flat length. Apply that to the skewer, pressing firmly to ensure contact.
- Back into the fridge for 30 minutes to firm up
- Remove Kofta, and sprinkle with the reserved spice blend.
- Grill over medium direct heat until cooked.
- Serve with rice, pita, Hummus, Lebanese Garlic Sauce, Tzatziki…so many options.
