
French Onion Soup
Ingredients
- 5 large onions, I use Vidalia
- 2 Tablespoon of butter
- 8 cups rich beef stock
- 1/4 cup red wine
- 4 Bay leaves
- 3 Sprigs of fresh thyme
- Crouton for the top (I use toasted baguette)
- Lots of Swiss cheese (gruyere is amazing)
Instructions
- Peel and slice your onions
- In a large pot with butter, on LOW, slowly reduce your onions (2 hours+)
- Make sure they are nice and caramelized, take your time
- Deglaze pot with red wine
- Add Stock and herbs
- Cover and simmer one hour
- Turn on oven broiler to High
- Ladle into Soup Bowls
- Place crouton on top and load up with cheese.
- Add more cheese
- Into the broiler till the cheese is melted and bubbling
- Let sit for 10 minutes
- Garnish with fresh thyme or chives
