
Grilled Salmon Taco
Ingredients
- 1 pound salmon fillet
- 3 tablespoon Salmon rub (3 to 4 T)
- 1 juice of 1 lime
- 1 avocado
- 1/2 cup Peppercorn Ranch Dressing
- 4 clove garlic (minced)
- 1/2 red onion (diced)
- 1 tomato, large (diced)
- 1 lime (cut into wedges)
- 10 corn or flour tortillas?, small
Instructions
- Preheat grill, then squeeze the juice of the lime over the salmon fillet. Generously sprinkle salmon rub over salmon fillet, coating evenly.
- Cut open avocado and remove flesh, crushing to an even texture. Add ranch dressing, garlic, and mix well.
- Grill salmon over a medium high heat until done. Break or chop salmon into small pieces and distribute among warmed tortillas. Top with avocado dressing, diced tomatoes, and red onion.
